How to use “Bankoyaki”
Before using “Bankoyaki”
If the bottom surfaces are textured, it would be wise to sand it softly with an abrasive paper. Also when you do that, you should take care not to jiggle Bankoyaki because it may be scratched the table by the bottom of Bankoyaki.
Before using earthen pots, you should boil the water with two tablespoons of flower. The surfaces of them have many small halls because they are made of clay. Starchy material contained in flower take a role as covers of them. If you have no flower, we recommend that you use starch and rice instead of flower.
Some heatproof products and earthen pots have Kannyu is a traditional technique and there are small chaps on their faces.If the products have Kannyu after you use many time with them, we recommend that you should boil the water with two tablespoons of flower in them. After do that small chaps are covered by flower.
After using potteries and earthen pots you should wash quickly and dry hard. If you clear them off without drying them perfectly, moldy and smell appear on them. We recommend that keep potteries stacked with paper between them because you avoid scuff on them.

Heatproof potteries made of cray
Material of potteries
The products made of cray have a high water absorption rate than “Semi-porcelain” products and they have warm and soft texture. Some products have Kobiki (process their face with soil that make them smooth) Kannyu (there are small chaps on their faces). We use their traditional techniques because of the special texture.
Caution
Before using the products made of cray, you should soak them in clean water and take their face much water. If you do that, you are able to reduce absorption of water and smear in their products.
Sometimes some marks like dots appear on the products’ face and Kannyu change the color. They have no problem to use the products.
Semi-porcelain

“Semi-porcelain” has a low water absorption rate than the products made of cray and has white and soft texture. Moreover, “Han-Ziki” is able to heat in a macrowave, so you are easy to use it.
Caution
Do not heat the products except heatproof potteries on an open fire and in a microwave.

Earthen pots and heatproof gratin dishes are able to heat on an open fire and this is a strongest point. Also you are able to heat them in a microwave and oven.
Therefore they have another strong point that is you can spread them immediately on the table.
Some products have Kannyu is a traditional technique and there are small chap on their faces.
Caution
Do not heat heatproof potteries and earthen pots which have wet bottoms. Do not heat them which are empty. Do not use them cooking with a lot of oil like fried-food and Tempura in order to prevent fire.
Do not apply extreme cold to heatproof potteries and earthen pots that have heat because they are not able to endure rapid temperature change. Do not touch potteries when you heat them or they have heat. Sometimes water appears on the bottoms of earthen pots, it is safe for quality.
